Recipe of the Week: Caramel Slices

My sweet tooth always gets the better of me so again this week I couldn’t help but share a sweet treat with you guys. My sister certainly knows how to spoil me but keep me on the healthy path. I really think you are going to love these so much…

‘These are just so delicious! They taste much better than they look! Perfect if you are craving something sweet’.

Ingredients
For the base
2 cups of almonds
1 cup of medjool dates

For the caramel layer
1 cup of medjool dates
3 tablespoons of cashew butter
1/4 cup of water
1 teaspoon of coconut oil
1 teaspoon of vanilla essence

For the chocolate layer
2 tablespoons of melted coconut oil
2 tablespoon of raw cacao powder
2 tablespoons of maple syrup or raw honey

For the base
Place the almonds in a food processor for a minute then add the dates and blend until you get a sticky mixture. Place the mix in a baking tray and push it down firmly. Place the tray in the fridge.

For the caramel
Place all the ingredients into the food processor and blend until beautifully creamy. Pour it onto the base. Do not place in the fridge.

For the chocolate layer
Blend all the ingredients into the food processor then pour onto the caramel layer. Place the whole tray in the freezer for a couple of hours. Once ready cut into slices and enjoy!
