Buckwheat Pancakes

Good morning lovelies, it’s another week so that means another healthy recipe up on the blog. So many people find breakfast the most challenging part of the day. Therefore this week, my sister Dania shares with you her favourite pancake recipe…

‘I have always loved pancakes but had always considered them unhealthy until now. There are so many healthy options to choose from. This week I have chosen buckwheat pancakes and they were delicious’.

Ingredients

2 Tablespoons of buckwheat flour

1 Banana

1 Egg

1 Tablespoon of chia seeds

120ml Water

For the topping: You can really use any topping you like. I used fruit and raw honey. You can add almond butter, coyo yoghurt or coconut flakes if you prefer.

Mix the dry and wet ingredients separately then combine together and whisk. Grease a non stick pan with some coconut oil and heat over medium to low heat. When using banana in your pancakes you must keep them small. Place pastry rings in the pan and pour in the batter. Once bubbles start forming remove the rings and flip over. You should cook the pancakes for 2-3 minutes on each side. Serve with the toppings of your choice and enjoy!
