Greek Salad

Happy Tuesday lovelies. I hope you all had a nice weekend. With these long warm Summer days there is nothing quite refreshing than quick salads for lunch so I am loving this quick easy greek salad that my sister prepared and sharing with you guys…

‘This is my favourite summer salad. I simply love it! I have many greek friends and have been in Greece several times and I simply love everything that is greek! This salad is just so refreshing and super easy and quick to make’ 

Ingredients:
4 Medium sized very ripe red tomatoes
1 cucumber
1/2 red onion
150g feta cheese
20 kalamata olives
Extra virgin olive oil
A generous pinch of oregano
quinoa bread or any gluten free bread of your choice.

Start by slicing the red onion very thinly. Chop the tomatoes into chunks. Peel the cucumber and also cut into bite sized chunks. Cut the feta cheese into cubes and place all the ingredients into a bowl. Add the olives, oregano and extra virgin olive oil. Place a few slices of quinoa bread into the oven and when ready drizzle with oil and oregano. Serve with the salad and enjoy!
