Quick Quinoa Salad

I’m slightly obsessed with quinoa lately – Apart from the fact it is so quick and easy to make, it really is nutritious as well!

Quinoa is a gluten free grain.  It stems back to the Incas where they regarded it as the ‘mother grain’ as they grew it high up in the Andes.

Unlike wheat or rice, quinoa is a complete protein – containing all eight of the essential amino acids. It is packed with dietary fibre, phosphorus, magnesium and iron. As it is gluten-free it is easy to digest. It has a slightly bitter flavour and firm texture so I think it is great to have it as a salad or side dish.

Here is a quick and simple recipe for a quick meal packed full of goodness.

Ingredients

1/2 cup of quinoa (for one serving)

2 cups of water  

1 tomato

1 Avocado

Feta cheese

Spring onion

Parsley

Place the quinoa with water in a saucepan and let it simmer for 10 minutes. Make sure to add a little salt to the boiling water. After stir with a fork so the quinoa is all fluffy and let it rest for 5 minutes. In the meantime chop the tomato, avocado, feta cheese and spring onion and mix into the quinoa. Drizzle olive oil and add salt and pepper. Finally sprinkle over some chopped parsley. Voila your quick and easy meal is ready 🙂
