Gluten Free Oat Porridge With Almond Milk

13th October 2014

Happy Monday gorgeous people! I’ve just made it to London for a few days and boy is it cold and wet. It’s a good thing I have my darling sister sharing one of her scrummy porridge recipes…seems to be ideal now.

‘With the weather getting colder you tend to favour more warming and filling breakfasts. If i have to be totally honest I have never really been a huge fan of porridge. Just the sheer look of it would put me off. It was only when I decided to change my diet and eat less eggs that I finally gave porridge a go. I have to admit it is creamy, tasty and incredibly good for you. Oats are good for lowering cholesterol and  great for the skin.’.

Ingredients
250ml of almond milk
40g gluten free oats
1 tablespoon of almond butter
1 teaspoon of cinnamon
1 apple
1 teaspoon of raw honey (optional. I have it without as I do not like it too sweet)

Start by placing the almond milk on the hob. Once hot but not boiling place the oats inside and stir. Cook for 10 minutes till soft adding more milk if desired depending on whether  you like your porridge thick or runny. When it is almost done add the almond butter, cinnamon and either grate the apple inside or chop it up in small bits. Keep stirring for a few minutes then take off the hob, set aside for a minute then serve with fruit of your choice and enjoy!
