Chia Coconut Tofu Pudding

This Week my gorgeous sister has yet another yummy dessert recipe and guess what? It s totally delicious and super healthy so you won’t be feeling guilty about indulging… 

‘I truly believe this is my best creation ever! It is so delicious that I have been eating it non stop all week. It makes a nutritious breakfast and a wonderful dessert.  It is also very easy to make’.

Ingredients:

For the chia pudding
2 Tablespoons of chia seeds
1/2 cup of coconut milk
1 teaspoon of coconut flakes

For the chocolate tofu smoothie
150g clear spring firm and silken tofu
1/2 banana
1 teaspoon of raw cacao powder

For the topping
A handful of strawberries and blueberries

Place the coconut flakes, chia seeds and coconut milk in a small mason jar or glass, mix all the ingredients together and place in the fridge for 3 hours or overnight. I normally prepare mine the night before. During the first 30 minutes stir the ingredients again as the coconut milk can become firm. Once the chia seed pudding is ready make the tofu smoothie by blending the tofu, banana and raw cacao powder in the blender till smooth. Pour on top of the chia pudding add the strawberries and blueberries. Hope you will enjoy it as much as me!

    Good sharing, for healthy purpose, Chia seeds offer the highest volume of Omega-3, as well as addition fiber (soluble and insoluble) along with vitamins or perhaps minerals you don’t usually get whenever you take sea food oil. Chia seeds giving you long lasting energy during the day moving in deep, restful sleep during the night time.
