Recipe of the Week: Chocolate Chia Pudding

I hope you all had a fab weekend! It was so nice to be back in the city and enjoy some down time with friends and family. Yesterday I attended the Vogue Festival and went to see the talk with Ella Woodward, Calgary Avansino, James Duigan and Andy Puddicombe, which was all about how to change your life and lead a much more positive and healthy lifestyle. It was so inspiring to hear them and it really made you more determined to take on a healthier approach but in a not so daunting way. It’s simply small realistic changes that can make a difference like cutting down sugar, eating more fruit & vegetables drinking more water and so on. There was one phrase that James Duigan said that I couldn’t agree more, ‘ It’s all about how you feel not how you look’. This is so true, because the moment you start feeling good about yourself that’s when you start looking your best.

So talking about healthy changes this weeks recipe from my sister is a healthy chocolate chia pudding – I do love chia puddings, they taste great and have so much goodness in them.

Chocolate Chia Pudding recipe

‘When I feel like having dessert I always go for a chia pudding. This one is incredibly easy to make and delicious. It is perfect for breakfast or as a sweet treat’.

Ingredients
2 tablespoons of chia seeds
1/2 a cup of coconut milk
2 tablespoons of coyo chocolate flavour coconut yoghurt
a splash of vanilla
1/4 of a teaspoon of cinnamon

For the topping
A handful of strawberries and raspberries

Place all the ingredients except for the strawberries and raspberries in a small mason jar or a glass, mix all the ingredients together and place in the fridge for 3 hours or overnight. I normally prepare mine the night before. During the first 30 minutes stir the ingredients again as the coconut milk can become firm. Once the chia seed pudding is ready add the fruit and enjoy.

    Good sharing, for healthy purpose, Chia seeds offer the highest volume of Omega-3, as well as addition fiber (soluble and insoluble) along with vitamins or perhaps minerals you don’t usually get whenever you take sea food oil. Chia seeds giving you long lasting energy during the day moving in deep, restful sleep during the night time.
