Recipe Of The Week: Marinated chicken with courgette noodles

This week my sister and I made this delicious recipe, marinated chicken with courgette noodles. A clean and lean meal that tastes great and leaves you feeling satisfied,. It’s the perfect recipe with this heatwave we are having.

Ingredients (Serves 2)

For the courgette noodles

5 small to medium courgettes

A pinch of salt

1 garlic clove

10 cherry tomatoes chopped in small pieces

Cayenne pepper or chilli flakes

For the chicken

2 chicken breasts

A generous amount of olive oil

2 sprigs of rosemary

4 sage leaves

Himalayan salt and pepper

1 garlic clove thinly sliced

Juice of 1/2 a lemon

Coriander finely chopped

Start by spiralising the courgettes. You can eat them cooked or raw. We like ours cooked as they have more flavour.  To get rid of the water that the courgettes produce, place them in a bowl and add a pinch of himalayan salt and drain them before you are ready to cook. We normally prepare ours the night before.

Next marinate the chicken with the oil, rosemary, sage, garlic, lemon juice, coriander,  salt and pepper. We marinate ours the night before. The longer it marinates the better the flavour.

When you are ready to cook start by cooking the chicken. You can either bake in the oven or cook it in the pan. We cooked ours in the pan sautéing it.

Once the chicken is almost done take the courgette spaghetti making sure you drain them removing excess water. Place in a pan on medium heat with the garlic, cherry tomatoes and chilli flakes and sauté for 4-5 minutes. Once ready serve with the chicken breast and enjoy!
