Ricotta Chocolate Cream & Spelt Pancakes

Happy Wednesday peeps! To make this week just a little sweeter I’ve got my fabulous sister sharing a delicious ricotta chocolate cream recipe along with some  yummy spelt pancakes!

‘This is such a delicious treat. It is creamy , chocolatey, and totally divine. You can eat it with pancakes, fruit or just place it in the fridge for a few hours and eat it on its own as a chocolate mousse. Ricotta cheese is very low in calories and fat, so it is just perfect. I don’t eat alot of dairy but if i crave cheese, ricotta and goats milk mozzarella cheese is what I would go for’.

Ingredients:

Ricotta chocolate cream
500g of ricotta cheese
2-3 tablespoon of raw cacao powder (depending on how chocolatey you like it)
2-3 tablespoons of xylitol (depending on how sweet you like it)

Place all the ingredients in a blender and blend till smooth. It is that easy! You can either place in ramekins and refrigerate for couple of hours or eat it straight away with fruit or pancakes.

For the pancakes

2 tablespoon of spelt flour
1 egg
100ml water
1 teaspoon chia seeds
Pinch of himalayan salt

Combine dry and wet ingredients and whisk. Place batter in a pan greased with coconut oil. When bubbles appear it is time to flick it over. Enjoy!
